Special Christmas Dinner Side Dish

Want a new delicious sweet and tangy side dish for your Christmas dinner table? Try the Finnish recipe for lanttulaatikko, mashed rutabaga casserole. In Finland it is one of the traditional dishes served, along with other casseroles, turkey, and ham, for Christmas dinner. When my grandparents came from Finland, they brought this recipe with them. The aroma of the vegetable first boiling on the stove and then baking in the oven is delightful.

Ingredients:

·      One large or two medium rutabagas

·      ½ cup butter

·      ½ cup brown sugar

·      ¼ tsp white pepper

·      1/3 cup milk

·      2 tbl flour

Directions:

1.      Rinse rutabagas until clean.

2.     Peel rutabagas.

3.     Cut into one-inch pieces.

4.     Place into pan with water to cover.

5.     Boil for 20-30 minutes until tender.

6.     Drain and place in a greased, shallow, oven-proof casserole dish.

7.     Mash until smooth, and ingredients are blended.

8.     Bake until light brown at 350 degrees for 45 minutes to an hour.

9.     Enjoy!
